Does a different pan need a different bake time?

Usually. A deeper layer needs longer and the centre can stay underdone at the same temperature. The tool flags the depth change; it does not invent a new time.

What does the multiplier mean?

It is the new pan volume divided by the recipe pan volume. Multiply every ingredient by it, for example with the Recipe Scaler, to fill the new pan the same way.

Can I mix inches and centimetres?

No. Measure both pans in the same unit. The multiplier itself has no unit.
