Where does 1 : 0.75 : 2.5 come from?
It is the usual weight relationship: instant is about three quarters of active dry, and fresh is about two and a half times active dry. Brands still differ a little.
Do I need to bloom instant yeast?
No. Instant yeast can go straight into the flour. Active dry is safer bloomed in warm water first.
Can I convert teaspoons?
Weigh if you can. One 7 g sachet of instant yeast is about 2¼ teaspoons, but spoon volume varies with grain size.
